Just leave out the cinnamon and other spices and just use brown sugar, that’s what I would do. My arms are tired just watching! This looks delicious though. That sure is a decorative gourd you’re crushing. Not sure if you’re gonna get a good pumpkin flavor out of it.

I will let you know how these turn out I also do a gingerbread croissant with all the warm spices all the way through the dough and put orange spice through it the same way you do everything else. You have to let the dough chill between turns! Otherwise, you break up the butter and it all melts out during the baking process and you’re left with very dry pastry. No on the croissants, there must have been too much moisture in the pumpkin, there was no rise. And the butter didn’t stay chilled enough during the roll-out phase, should be refrigerated between each turn. The layers shouldn’t be separated like that. Everything else looks good though.
