We have smoked hundreds of pork butts and this method has served us well. I need this New Rub my butt then you can pull my pork Pig shirt. Pitmasters way of doing this will vary from region to region but mostly the only differences are the Rub & Sauces used. I ran a commercial BBQ restaurant and I have even cooked a lot of pork butts on my own. After trying every method that I have seen and heard about this is what I believe to be the best way to do it.

Make a few cuts across the fat cap to help the heat get in. This New Rub my butt then you can pull my pork Pig shirt is cute. This will help start the melting process that you ultimately want. Do not cut the fat cap off the Pork Butt, this is where a lot of your flavor comes from and you will want it on there. Take the pork out of the fridge and let it sit at room temperature for an hour. This again will help loosen up the fat and get it ready to start melting. Some Pitmasters will only smoke the pork for 4 hours and then remove it from the smoker and wrap it up. Then return it to the heat to finish the cooking. But this all depends on how smoky you like your pork and how much smoke that your smoker infuses into the meat. Some Pitmasters will smoke the pork for the entire time that it is cooking.
Now with the pork all pulled, place it in a bowl. This is where pitmasters vary on what to do. Some (myself included) will just serve it up just like that. While others will mix in BBQ Sauce and mix it all up together. This always seemed to me like they were trying to hide the real flavor of the pork. Although it can be held that way for longer periods of time and still be great. I prefer to add the sauce I want to my own plate. That way I control what sauce is used and how much.
